Lemon Tahini Dressing // vegan


This easy to make lemon tahini dressing is slightly tangy, smooth and ultra thick and creamy. With its hint of zesty lemon and garlic it makes a great dressing to pour over salads, roasted vegetables, buddah bowls or enjoy as a healthy dip for veggie sticks.

This lemon tahini dressing is super versatile. You can make it in as little as five minutes and instantly you have jazzed up your dish (which may just be a simple side of veggies) giving it extra flavor.


My favorite way to enjoy this dressing is simply poured over roast vegetables, it adds extra flavor and texture and it is a good way to add some extra protein, minerals and healthy fat into your meal

 

Ingredients:

  • 1/3 cup tahini

  • 1/4 cup lemon juice

  • 1/3 cup water

  • 2 garlic cloves, peeled

  • 1/4 tsp cumin

  • 1/4 tsp sea salt

  • freshly ground black pepper

Instructions:

  1. Place all of the ingredients into a high speed blender and blitz until smooth.

  2. Taste. Add in more salt and pepper if desired.

  3. Check the consistency of the dressing. If you would like it to be runnier then add more water.

  4. Serve immediately and keep any remaining dressing in an airtight container in the fridge
