Eating seasonally has been my new favorite thing! I switched my typical summer squash for seasonal delicata squash and I’m officially OBSESSED. Although you can enjoy with a simple salt and pepper seasoning, try taking your squash to a new level and have it for dessert.
Ingredients:
~ 2 Delicata squash
~ 1 tbsp pure maple syrup
~ 1 1/2 tbsp coconut oil
~ 1 tsp ground cinnamon
Instructions:
~ preheat oven to 425 degrees F
~ line a large rimmed baking sheet w parchment paper
~ clean the squash, cut both ends off & slice in half lengthwise
~ remove the seeds & cut each half into 1/4-inch thick slices
~ place the squash slices in a large bowl & drizzle w coconut oil, maple syrup, & sprinkle with cinnamon. Toss to coat
~ spread squash slices evenly on prepared baking sheet
~ place in the oven and roast for 15-20 minutes
~ enjoy
